True Neapolitan Pizza

What is a true "Neapolitan Pizza"?
● A true Neapolitan Pizza must be made in a wood burning oven. Gas, coal or electric ovens do not conform to the true Neapolitan Pizza.

● Use of proper ingredients are important. We use "00" flour,  San-Marzano tomatoes, all natural buffalo mozzarella, fresh basil salt and yeast. All of our ingredients are imported from Italy.

●  The art of making hand-crafted, truly authentic Neapolitan pizzas is a technique perfected by our chefs. Every pizza is hand-prepared with fresh ingredients, contains a fragrant aroma, tender texture and a fire-kissed crust that is cooked at a temperature of approximately 800 degrees for 2 minutes.
 

● The pizza should be soft with a higher edge or crust with some charring or blackened blisters. The crust should have a touch of crunch.

QUESTION:
Tomatoes....Vegetable or fruit?
 


ANSWER:
Botanically, tomatoes are actually a fruit. This is because, generally, a fruit is the edible part of the seed containing the seeds, while a vegetable is the edible stems, leaves, and plant roots. But in 1863 the Supreme Court ruled that tomatoes were to be considered vegetables.

TROTARI RISERVA TALENTO
The Rotari Riserva is a combination of 90% Chardonnay and 10% Pinot Nero. The grapes for the Rotari Riserva are grown in the hills of Faedo and Pressano.

METHOD OF PRODUCTION
It is produced in the "Metodo Classico" and adhering to the strict quality standards mandated by the Trento D.O.C. guarantee. The Rotari Riserva is bottle fermented for 36 months.

CHARACTERISTICS
Color: straw yellow
Fragrance: intense, elegant and complex
Flavor: dry, full, fragrant, soft, well balanced and mature
Perlage: fine and persistent

PAIRINGS
Excellent as an aperitif, recommended with first and second course dishes.

Heirloom Tomatoes are one of the easiest of the garden varieties to grow, and this is brutally obvious as you will discover that just as fast as you pick them, more have taken their place almost overnight. FARM STAND Tomato SALAD
 

Chef Sam is not only self taught, but creates signature dishes with a “new-school” Italian flavor that are beautifully displayed and memorably delicious! Here's a great dish that you can cook at your house!
 

 
Ingredients

4-5 Lbs Heirloom tomatoes cut into large cubes
1 Small red onion diced
3 Ears of corn grilled and cut off cob
1 Bunch of Scallions washed and sliced thin
2 Cloves garlic sliced
1/4 cup Rice Vinegar
1/4 cup Champagne Vinegar
1 Tsp Mustard seeds whole
1 Tbs Fennel seeds whole
1 Quarter cup brown sugar
3/4 quarters cup of Extra virgin olive oil
Salt and Pepper to taste

  To Prepare:

Combine brown sugar, rice vinegar, champagne vinegar, fennel seed and mustard seed and cook over medium heat until sugar is melted. Set aside to steep for 5 minutes. Remove cover and allow to cool to room temperature

In a large bowl combine tomatoes, onions, corn, scallions and garlic.  Add vinegar mixture and oil to bowl. Season with salt and pepper to taste and refrigerate 2-4 hours before serving.
