International Pizza Challenge™ held in Las
Vegas, which is rapidly becoming the world's
premier traditional pizza-making contest.
Placing first in the regional division, Giove’s
Pizza Kitchen went on to compete in the
International Pizza Challenge™ Finals on
Thursday, March 12, placing

Did
You Know.....

Blueberries are one of the easiest fruit to prepare and
serve. There’s no peeling, pitting, coring or cutting.
They have few natural pests, (other than birds), so
pesticides are generally unnecessary!
Blueberries are literally bursting with nutrients and
flavor, yet very low in calories.
Early American colonists made grey paint by boiling
blueberries in milk.
If all the
blueberries grown in North America in one year were
spread out in a single layer, they would cover a
four-lane highway that stretched from New York to
Chicago.
The blueberry is the
second most popular berry in the U.S., the strawberry is
number one. Over 200 million pounds of blueberries are
grown commercially each year.
North America produces nearly 90% of world blueberry
production. |

Blueberry
Coconut Tarts with Lemon Zabaglione
Makes 4 tarts
Chef Sam is not only self taught, but creates
signature dishes with a “new-school” Italian
flavor that are beautifully displayed and
memorably delicious!

Lemon Zabaglione (topping) |
|
1/2 oz. butter |
|
4 oz. lemon juice |
|
2 3/4 oz. confectioners sugar |
|
4 egg yolks |
|
1 egg yolk |
|
4 oz. granulated sugar |
|
12 oz. all purpose flour |
|
4 oz. heavy cream |
|
1/2 oz. heavy cream |
|
4 oz. sour cream or cream fraiche |
|
Cream sugar and butter until
fluffy. Add egg slowly.
Alternate dry ingredients with
heavy cream. Bake 12 minutes (no
filling) |

Cook juice, yolks and sugar over bain
marie until very thick. Fold in cream
and sour cream or cream fraiche when
cool. Top cooled tarts with mixture. |

Filling: |

6 oz. granulated sugar |
|
|
|
7 oz. heavy cream |
|
|
|
16 oz. blueberries |
|
|
|
16 oz. coconut |
|
|
|
Heat sugar and cream together. Fold in
berries and coconut. Pour into pre-baked
tart shells and bake for 25 minutes |
